What I would recommend is to buy one like this but with the inverted top. It works like a press. You place the pasta on the mold then you use the top part to press the pasta into the holes or dimples. This one works great but you need to be careful because if your pasta may spring up and not allow you to completely fill the pockets with cheese. I just think it may be easier to press down with the opposing top and then fill,cover with pasta and roll it with the roller. This is a very high quality product and works great. There is just a small learning curve. I used a small paint brush to add water between the two layers of pasta. Worked great. Did not have any ravioli explosions while boiling..I had considered buying the ravioli attachment made by Imperia, but decided that simpler is usually better, and I think this product bears that out. The set is made by the same company (Imperia), and who knows ravioli better than the Italians? On my first attempt, I made absolutely incredible ravioli, using pasta sheets that I had prepared using the Imperia pasta machine (manual version), which is well worth buying if you truly love (and appreciate) good pasta. The ingredients are, well, downright cheap: unbleached white flour, eggs, and (if needed) a bit of water. The results, though, are heavenly. Consider stuffing your ravioli with pumpkin (!), ricotta, and Parmesan (the REAL thing, from Italy)... and a pinch of nutmeg. Your dinner guests will be delighted... and so will you.Difficult to use, seems like an easy concept but it lacks instructions for how to use it. Really struggled with using this and then attempting to roll out ravioli after stuffing them.No instructions in the box? Need to research, need to find out if I need to wash first, can I wash in the dishwasher, etc. I have single use ones, but that makes for slow going for a family of four.My wife and I have been enjoying making fresh pasta. Decided to try our hand at making Ravioli. We have made several batches and the tray does work. The issue is that the serrated edge is not tall enough to sufficiently cleanly cut the ravioli as you run the roller over it. We ended up cutting most of the ravioli with scissors.Design has faults due to the inability to readily "cut" the borders of the dough. The "cut" depends upon the raised dimples and do not seem effective. Had to improvise to make this item useful.For the novice ravioli chef ... perfect. Easy to use. Great results. Easy to clean.Hard to fill then press. Doesn't cut ravioli. Nella confezione esce anche un piccolo mattarello. Lo stampo è bello massiccio (anche pesantuccio) ma lo rende molto robusto, sullo stampo ci sono anche delle zigrinature che permettono nel momento in cui si stende la sfoglia di tagliare anche i diversi ravioli. L'unica pecca è che l'alluminio liscio fa attaccare un po' la pasta, ma nulla che un po' di farina non possa risolvere
