I don't claim to be a pancake gourmet, but I do enjoy making and eating 'em. I've made pancakes exclusively from the Hula Girl pineapple-coconut mix, and I've also mixed it 50/50 with a multigrain pancake mix from TJ's. I personally prefer the latter, but perhaps that's because I grew up on hearty, substantial pancakes (vs. light-n-fluffy). Anyway, the addition of pineapple chunks and coconut shavings adds a nice crunch and delicious taste to pancakes, IMHO. Granted, I could just buy dried pineapple and coconut and throw 'em into a mix, but it's a challenge to find small pineapple chunks, so this mix works out well. p.s. I stumbled across this product on Amazon while searching for mixes with coconut flour instead of wheat flour. Coconut flour alone, no problem, but a mix? Guess I'll just have to create such a mix from scratch. We lived in Hawaii and used to buy this at the grocery store, and it was the best pancake mix I ever had. I was excited to see it online and ordered it, and when we made the pancakes they tasted absolutely horrible- not just bland and gummy, but they had a gross chemical taste. A couple of us who ate more than one bite did not feel good for the rest of the day. Unfortunately there is no way to return this or get my money back, so I will be tossing out the second bag I bought.I was expecting to taste Coconut Cream pancakes instead to my surprise got a nasty bitter & spicy taste in my mouth i had to spit it out. This is not pancake mix and not COCONUT CREAM. I don.t know what product or ingredients were put in this bag but its definitely not pancake!!Doesn't taste that greatBut don't let that discourage another from this purchaseEveryone's taste buds varySo first, this by itself makes for a very good pancake mix. I find that running it through a sifter help to make better pancakes, and then dumping the lavender seeds back into the mix to be stirred back in. Next, the lavender is quite aromatic and provides a great accompaniment to the subtle lemon. All in all, this is a great, easy way to amp up a special breakfastVery little flavor and cooks up like a crepe. Even when I added some Trader Joe's coconut pancake mix to it, it still was very runny. Trader Joe's is 1000% better. Don't waste your money buying this.I bought this brand when I was in Hawaii. These are the same brand and flavor, but maybe the company has changed the recipe? They are NOT the same unfortunately.Delicious to say the least. Simple mix and wonderful results.A wonderful way to start the day. Maybe a little pricey but so is life.....This mix is good, but I wish it didn't contain soy flour. Without the soy flour, this would be a far better product. The flakes of coconut are quite a bit larger than expected, and I initially thought the batter was far too lumpy, but then realized it was coconut. Overall, the mix is fresh, flavourful and easy to use. I'm not supposed to eat soy, so while I would like to purchase it again, I will have to do so only on rare occasion. Perhaps I can combine this mix with plain pancake mix to reduce the soy content somewhat.I has to return this product as it was well past the expiry date when it arrived. Very disappointing as I love hula girl pancake mix.
