Well constructed and it can be completely disassembled for proper cleaning. It was exactly what I have been looking for to make the spritz biscuits I grew up with. My husband could not stop eating the first tray, while I was still working on the next tray. I will give it few more chances with different dough recipes, hoping to keep it. I would have given it more stars, but unfortunately it has few shortcomings:- The dough is leaking badly around all parts at the the spritzing and behind the pushing rod. It is a bit messy because of that.- When I took it apart at the end of the job, I found dough worth of 3-4 cookies at least still inside the cylinder. I rolled them by hand (no wasted dough!).- Another annoying thing was the nut holding the handle kept unscrewing itself while cranking.- Disappointed it is made entirely of aluminum, not quite healthy for my personal preferences and standards on kitchen utensils..I bought and use this press for one thing only, making southern style cheese straws. Cheese straws that I may one day sell on Amazon. Cheese straw dough is dense. it's basically cheese, butter, flour. I had a previous press that had a narrower cylinder and tighter threads on the main crank screw. I welded a drill bit onto the back of the handle to extrude the dough. The threads on the main crank screw are around 9 threads per inch. My previous press was double that and narrower. The wider cylinder and the lower thread count on the main screw means that it requires a lot of power to turn the crank. The die through which the dough is extruded that comes with the unit isn't as strong or robust as the cylinder or the ring that holds the die in place. I had a new die (star shape) cut from 2mm stainless steel that works wonderfully. I mount the press on a bench vice that is secured to my counter and am able to turn the crank with one hand while my other hand is free to handle the extruded dough. This setup works well for me. If I do decide to launch a cheese straw business, I might look at ways to mechanize the extrusion process. But until then, this product works well, except for the somewhat flimsy die that comes with it.This product would get 5 stars if it came with 5 strong usable dies rather than one weak one that allows for the user to select one of five shapes.Only used once so far for cheese straws using star design. The Fante construction/design is very similar to the highly rated old Sveico cookie press which isn't made anymore. I wanted a crank handle since cheese straw dough is usually denser than cookie dough. Barrel is longer & holds more dough than other designs. However, more dough gets stuck under both screw rings, so you will have to be creative if you want to use that dough. May need a bottle brush to clean out when finished. I would say the downside is the designs are all on one slide-through insert rather than separate disks. Seems to get in the way of what's already on your baking sheet.Very well made. Wish there was the option of interchanging the screw on cookie end with other presses that have more cookie designs or have more options for this press.I’ve only used mine once to make cheese straws. The cylinder is so large I could barely keep hold of it (and I’m not a small girl with tiny hands). Also, the sliding thing for the different designs is very loose, hard to keep in place. Then, once you get it in place, you’ve also exposed a bit of the opening of the next design so you get some extra bits you have to put back into the batter. I’m willing to give it another try, maybe even find a way to fasten the sliding thingy to it permanently on the cheese straw design I want to use. Would not buy it again, though.I ordered it to have on hand when and if my Nordic cookie press (which is very similar and no longer available) wears out. I made cheese straws with it and used a disc which the Nordic does not have. They were the best cheese straws I've ever made (a perfect size and deliciously CRISP!)Wonderful for cheese straws- just make sure your dough is at room temperature. My recipe uses more butter than the one in the instruction manual, so that may help too. This is the only way to get extra crispy ridged cheese straws, and works best on the zig zag or star setting. Yes, there is a little dough that the plunger misses on its way down- just re-load it for another strip. There’s always a bit at the bottom it can’t press out either, just roll it into a cookie. I have used this over and over since getting it and it’s great! Finally found a cookie press that worked well. Would like to have more discs. I use the star tip for Spritz cookies but that’s the only one used. Not good for making hard biscuits, the plate bends and really hard to use when the dough is harder. For soft cookies might be okay, haven't tried as returned and refunded.Bon pour faire des biscuits mais il faudrait une poigner pour retenir le mouvement de la visNeeds a lot of practice to use . I found it ungainly but I am in a wheelchair and the height was cumbersome and painful for me.Love the way its built and easy to use.Haven't baked cookies as I was looking for this type cookie press.Happy I found it.They work really well!
